Though this is limited by location, get friends together for a party cruise. End the night alone on the beach and retire at the hotel nearby.

Rent a houseboat for the evening/weekend and cook dinner on the water.

Find a place with a tucked-away booth, and bring a game like "So Cards Deep Conversation Starters"

Weather permitting, set up the backyard with a big sheet/screen. Get a projector and watch movies.

Friday at lunch whisk her away for a surprise getaway weekend.
