Favorite salad ingredients

Always looking for new ways to make my daily salad fun. I always start with green leaf lettuce as the base. I have to avoid spinach and kale due to the high oxalate content (kidney stones). After that, I try to rotate ingredients frequently, on a weekly basis. I usually add a protein like tuna, mackerel, sardines, and occasionally bacon. My latest salad dressing kick is Primal Kitchen Honey Mustard or Green Goddess or Italian. I love onions raw or sautéed but I avoid them on workdays. 

    1. Beets

    In moderation. Another higher oxalate veggie.

    2. Cherry tomatoes

    3. Mini cucumbers

    4. Avocado slices or guacamole

    5. Pea shoots

    I've grown these on the window sill. Pretty east, but like anything, you need to attend to it.

    6. Alfalfa sprouts

    7. Broccoli sprouts

    Easily grown in Mason jar kits. 

    8. Celery

    9. Carrots

    10. Sautéed mushrooms

    I prefer them cooked over raw, but sometimes I'll do raw to mix things up.
