Odd (but reasonable) things to add to mac&cheese

1. Truffle Oil
Simple and amazing. It gives it a unique "restaurant" flavor.
2. Sriracha
There are few things this can't be added to.
3. Mushrooms
Sauteed fresh or simply out of a can or jar. A way to give "meaty" flavor without adding meat.
4. Breadcrumbs
This might be obvious (it's something my mom always did), but I once spoke to a friend who had never heard of this.
5. Shrimp
One of the simplest ways to add protein. Shrimp cook quickly so it doesn't take much time.
6. Tuna
The easiest way to add protein. Drain a can, and presto!
7. Pesto
I literally thought of this because I wrote "Presto!" above. Pesto is great.
8. Broccoli
Cheddar and broccoli soup is great! Cheese and broccoli go well together.
9. Blue Cheese
This answer might be cheating, but blue cheese will give it a more robust, funky flavor. Some people love it. For others it's too much.
10. Peas
Gives it a great texture. Non-intrusive flavor. Way to get some green!
11. Clams
Bonus idea! Never tried this one, but why not?
