Supermarket items that can do double duty
Items to get from the supermarket to help with meal prep. This is a mix of fresh and prepared items. You don't have to be a hard-core cook to be able to use these.
1. Mushrooms
Sliced or whole, can be added to Soups, stir fries, meat loaf. They last about a week or so in the fridge.
2. Onions
Have one or two on hand you can cut them in half and store half in the fridge for a week or more
3. Lemons or limes
Add lemon juice to vegetables, Mix with olive oil for a dressing. Add slices to water etc.
4. Feta cheese block
Decent with eggs. Good baked and drizzled with olive oil. Lasts a long time
5. Green split peas in a bag
Good for pea soup of course. The don't need presoaking. Family Feasts for $75 a Week suggests cooking them in broth along with garlic, jalapeno and a little turmeric. Betty Crocker has a free online recipe
6. Jarred salsa
One of the best recipe cheat items. Add to a mashed avocado for quick guacamole. Use a spoon or two as a pizza base. The open jar can go in the fridge for about a week or two.
7. Goya garlic olive oil
Relatively cheap. A few handfuls of chopped chard is great heated up with a tablespoon or so of the oil
8. Coconut oil
This solidifies below a certain temperature. Fine for cooking greens, eggs, or roasting veggies. Keeps for a few months or more
9. Red wine vinegar
Use with olive oil on fish that's being baked or grilled. Makes an easy dressing.
